Avocado Chocolate Mousse + A Summer Update

Hi hi! It's been a long time, but I'm still alive and cooking. Let's just say I had a rough semester. College kicks me in the butt without fail every year, but this semester, it was not only butt kicking, it was also rabbit punching me in the face. I often cooked and ate out of the same pot, if that gives you any indication of how bad it was. If you noticed that I stopped posting food photos, organic chemistry and biochemistry are to blame. Luckily, I survived relatively unscathed. Woohoo!

Now that the school year is over, another barrier to my food posts is my recent problems with technology. My phone no longer charges so I could not use it for an entire week! (Horrible first world problems, I know.) Anyway, I've been using my mom's old phone as a sort of external charger so I can kind of use my phone again. However, there's no way for me to connect my phone to my computer so no Instagram posts until I can get a new phone in July. To make matters worse, my laptop also stopped working last night because it no longer charges. Dead phone. Dead laptop. I must be the bane to all electronics.

Technical issues aside, the real focus of my summer is the DAT (MCAT for dentists) and dental school applications. I feel like I'm in high school applying to colleges again, and not exactly in a good way. Even so, it's much better than the last month of the school semester. No feelings of impeding doom yet, just chill-studying. Food is my sweet distraction. (So is Game of Thrones and BuzzFeed)

Luckily, I get to do do all that studying, applying, and procrastinating in the comfort of home. I'm back in Fargo for the summer and excited to use all of my mom's fancy kitchen gadgets again. I've been cooking pretty much every day since I've been home but most of it wasn't really blog-worthy. (The tasty but not particularly photogenic kind of food.) I mostly just make Chinese food ad lib; throw in a handful of this and a scoop of that and season to taste, no measuring spoons in sight. If anyone is interested, I might post a few home-y Chinese dishes in the future with loose instructions.

The recipe today is not at all Chinese or even Asian for that matter, but it is fully delicious. It's super simple and super indulgent. It's the kind of food I'd like to eat in bed while binge-watching Game of Thrones. Definitely not for sharing. Two minutes, five ingredients, and a blender are all you need to make a rich chocolate mousse. By the way, it's vegan so you can feel super hipster as you gobble it up. Happy munching!

Avocado Chocolate Mousse

Serves 1

Ingredients:

1 ripe avocado

2 tbsps Dutch process cocoa powder

3 tbsps Maple Syrup

Pinch of sea salt

2 drops of vanilla extract

Preparation:

Blend all ingrdients until smooth, stopping to scrape down the sides as needed. Eat immediately with desired toppings. Raspberry chia jam and banana chips are highly recommended.
